Jesenje nijanse / The Hues of Fall

Ja obožavam leto, kada zelenilo drveća i šarenilo cvetova razveseljavaju na svakom koraku. Kada se uz to dodaju mirisi ranog jutra sa cvrkutom ptica, jako je teško ustati loše volje. U jesen, kada su  jutra zaparana oštrinom, koja stavlja do znanja da je i zima već tu negde i čeka u prikrajku, izazivaju u meni želju da se pokrijem toplim, perjanim jorganom i utonem u san kao medvedić.
Ova jesen je bila lepa. Jutra su bila prohladna, ali dani topli i sunčani. Zlatne nijasne krošnji drveća, uz kristalno plavo nebo i blago jesenje sunce izazivale su u meni osećaj smirenosti. Topli dani su za još koju nedelju produžili život raznovrsnom cveću i ulepšali i onako već lepu jesen ove godine.
Kada sam pre neki dan gledala fotografije sa bloga talentovane Zee, inspirisala me je da pogledam oko sebe i zapazim detalje jeseni. Njen foto blog sadrži predivne slike prirode u Arizoni.
Ovo je jesen, onako kako je ja doživljavam...

I adore the summer, when green colors of the trees and  the colorfulness of the flowers cheer you up on every step. When you add the scents of the early summer mornings and the chirping of the birds, it is difficult to get up in bad mood. In the fall, when the morning air is cold and crisp, and it seems that winter is around the corner, makes me wish to cover myself with a warm blanket and sleep like a little bear. But this fall was very beautiful. Golden crowns of the trees with blue, clear skies and the warm fall sun gave me the feeling of calmness. Warm days prolonged the life of late summer flowers for a few more weeks and made this fall even more beautiful.
A few days ago, I visited the blog of the talented Zee, who inspired me to look around myself and to notice details of the fall. Her photo blog is full of beautiful photos of the nature in Arizona.

Kukuruzni hleb sa sirom / Cornbread with Cottage Cheese


*Napomena: mera za šolju se odnosi na šolju od 250ml.


Kukuruzni hleb sa sirom

2 jajeta srednje veličine, ne previše sitna
3 pune kašike šećera
113g otopljenog putera (ili 1/2 šolje)
250ml mlaćenice (ili kao zamenu pomešati 250ml mleka sa jednom kašikom limunovog soka ili sirćeta)
170g kukuruznog brašna (ili 1 šolja)
140g belog brašna (ili 1 šolja)
1 kašičica soli
1/2 kašičice praška za pecivo
1/2 kašičice sode bikarbone
150g sitnog sremačkog sira pomešanog sa 3 kašike mleka (ili 2/3 šolje cottage cheese)



Ugrejati rernu na 190 Celzijusa.
Pripremiti mlaćenicu tako što se pomeša 250ml mleka sa 1 punom kašikom limunovog soka ili sirćeta. Staviti da odstoji par minuta.
U posebnu posudu pomešati sve suve sastojke: kukuruzno i belo brašno, so, sodu bikarbonu i prašak za pecivo. Ostaviti po strani.
U veću posudu dodati jaja i šećer i umutiti. Dodati otopljeni puter i dobro izmešati. U masu dodati mlaćenicu i  sve suve sastojke. Dobro umutiti. Dodati sir i sve dobro promešati.
Žitku masu sipati u dobro podmazan pleh (ja koristim okruglu tepsiju prečnika oko 20cm). Peći na 190 Celzijusa oko 30-40 minuta ili dok hleb odgore ne porumeni. Jedan od načina da se hleb i uopšte kolači provere da li su gotovi je korišćenjem čačkalice. Probosti sredinu hleba čačkalicom i ako na čačkalici nema ostataka živog testa nego mrvice ili je čačkalica čista, hleb je gotov.




























Cornbread with Cottage Cheese


2 large eggs
3Tbs sugar
1/2 cup butter, melted
1 cup buttermilk
1 cup cornmeal
1 cup all-purpose flour
1 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
2/3 cup cottage cheese


Preheat the oven at 375F.
If you do not have a buttermilk, add 1 Tbs of fresh lemon juice or white vinegar to 1 cup of milk. Set aside for a few minutes.
In a separate bowl mix all dry ingredients: cornmeal, all-purpose flour, salt, baking powder and baking soda. Set aside.
In a big bowl add eggs and sugar and mix it. Add melted butter. Stir. Add buttermilk and mix well. Add mixture of dry ingredients and mix well. Add cottage cheese and mix it well. 
Pour the batter in well greased pan (I use circular 9 inch pan) and bake at 375F for 30-40 minutes or until golden brown. I usually check with tooth pick. I put toothpick through the center of the bread and if it is clean or with crumbs on it, the bread is baked.

Izlazak sunca i poklon za bebu / Sunrise and Gift for The Baby

Plišana igračka, ispričana lepa bajka pre spavanja i topli "zagrljaj" pamučnog pokrivača biće dovoljne da beba utone u lagodan san. I naravno, mamin ili tatin poljubac:)

A soft stuffed animal, a fairy tale book, and a warm "hug" of a cotton blanket would be enough for a baby to have good nights sleep. And a kiss from a Mom or Dad, of course:)

Paštetice od kinoe / Quinoa Patties



Ovog leta sam otkrila blog Heidi Swanson 101 Cookbooks. Blog je pun recepata sa dosta neuobičajenih sastojaka, od kojih neke nikada nisam koristila prilikom kuvanja. Prvi recept koji sam probala da napravim je bio prženi pasulj sa lisnatim keljom. Kada spremam jelo po nekom receptu, uglavnom svaki put nešto izmenim. Moja verzija recepta sa 101 Cookbooks, prženi pasulj sa lisnatim keljom je bila malo drugačija. Na maslinovom ulju bih propržila sitno seckani beli luk, dodala pasulj iz konzerve, sitno seckani lisnati kelj i malo soli i bibera. Jednostavno i brzo ali jako ukusno, tako da je ovaj recept ovog leta bio često spreman kao dodatak mesu.
Juče sam na 101 Cookbooks našla pečene kinoa paštetice. Obično ne koristim kinou u kuvanju, ali sam odlučila da probam ovaj recept. Danas sam napravila paštetice od kinoe, ali malo drugačije nego što je Heidi postavila na svom blogu. Umesto prezli sam koristila braon pirinčano brašno i bademovo brašno. Paštetice su spolja bile hrskave, a iznutra meke i sočne.

Paštetice od kinoe

oko 350g kuvanog zrna kinoe (ili 2+1/2 šolje)
4 jajeta
1/2 kašičice soli
1 kašičica praška za pecivo
pola crnog luka, sitno seckanog
2 češnja belog luka, sitno seckanog
1 kašika kozjeg sira (ja sam imala toliko, iako bi bilo mnogo bolje bar 2-3 kašike sira)
1 list lisnatog kelja, sitno seckanog
3-4 kašike braon pirinčanog brašna
2 kašike bademovog brašna
maslinovo ulje za prženje


Skuvati zrna kinoe prema uputstvu na pakovanju. Ja sam kinou pripremila ovako: u sud od 2 litre, staviti 500ml vode i sačekati da voda provrije. Dodati 1 šolju (od 250ml) kinoe, i kuvati pokriveno na srednjoj temperaturi oko 12 minuta ili dok kinoa ne upije svu vodu. Skloniti posudu sa šporeta i ostaviti kinou da odstoji još 15 minuta. Na ovaj način se dobije oko 4 šolje (od 250ml) kuvane kinoe. Ostaviti skuvanu kinou da se potpuno ohladi.

Pomešati kinou, so, prašak za pecivo i jaja. Dodati crni i beli luk, sir, lisnati kelj, pirinčano brašno i bademovo brašno. Sve dobro izmešati i napraviti paštetice debljine 3cm. Pržiti na ulju sa obe strane dok ne porumene.
Napomena: u originalnom receptu su korišćene prezle, ne brašno od badema i pirinča. U slučaju kada su prezle pri ruci, koristiti oko 2/3 šolje (od 250ml) prezli.


This summer, I discovered the blog of Heidi Swanson's 101 Cookbooks. Blog is full of healthy recipes, with some unusual ingredients that I've never used before. The first recipe I tried was pan-fried corona beans and kale recipe. However, I never exactly follow the recipe and always add or remove some ingredients. In the end, the recipe is always at least little different than the original one. For the pan-fried corona beans and kale recipe I tried a slightly different version of this recipe. I cooked minced garlic in olive oil, add canned kidney beans, kale cut in tiny strips, and salt and pepper. It was delicious and I prepared it many times over the summer. 

Yesterday night, I found the Heidi's baked quinoa patties and decided to try it. Usually, I do not use quinoa in my cooking so I wanted to give it a chance. Today I prepared the patties but once again with different ingredients. Instead of bread crumbs I used a mix of brown rice flour and almond flour. The patties were crunchy on the outside and very moist inside.


Quinoa Patties

2 and 1/2 cup of cooked quinoa
4 large eggs
1/2 tsp salt
1 tsp baking powder
half medium onion, finely chopped
2 garlic cloves, minced
1 Tbsp of goat cheese (I did not have more, but probably 2-3 Tsp would work fine)
1 leaf of kale, without the stem, chopped
3-4 Tbs brown rice flour
2 Tbs almond flour
olive oil for frying


Cook quinoa according to package and let it cool for a while. Mix cooked quinoa, eggs, salt and baking powder. Mix well. Add onion, garlic, goat cheese and kale. Stir. Add brown rice flour and almond flour. If the mixture is too soft, you could always add little more almond flour. Make patties around 1inch tick. Fry each side of patties until golden brown.

Čokoladni kolač sa jabukama / Apple Brownies

Sada kada su jabuke u izobilju, ovaj kolač je idealno rešenje kada postoji potreba za nečim slatkim, a uz to se i lako pravi. Originalan recept sam našla ovde. Dosta sastojaka u kolaču sam izmenila. Ovo je moja čokoladna verzija tog kolača.

*Napomena: mera za šolju se odnosi na šolju od tačno 250ml.

Čokoladni kolač sa jabukama

1 jaje
70g šećera (ili 1/3 šolje)
113g putera, otopljenog (ili 1/2 šolje)
130g čokolade, otopljene (ili 3/4 šolje)
3 jabuke srednje veličine, bez kore, isečene na tanke listiće
140g brašna (ili 1 šolja)
1 kašika kakao
1/4 kašičica soli
1 kašičica sode bikarbone
1/2 kašičice praška za pecivo
1 kašičica cimeta
1/4 kašičice mlevenog karanfilića

Zagrejati rernu na oko 175 Celzijusa.
Otrebiti jabuke i izdubiti. Iseći na par velikih kriški i iseći na trenicu. U veću posudu razbiti jedno jaje, dodati šećer i blago umutiti. Dodati otopljenu čokoladu i otopljen puter.
U drugu posudu staviti brašno, so, začine, kakao, sodu bikarbonu i prašak za pecivo i sve dobro izmešati. Pomešati obe mase i dobro umutiti. Isečene jabuke ubaciti u smesu i dobro sve izmešati.
Masu staviti u pripremljenu staklenu posudu veličine 23x23 cm. Peći na 175 Celzijusa oko 30 do 35 minuta. Kada je kolač gotov, odgore posuti šećer u prahu.

Now, when the apples are in abundance, this cake is perfect solution when you crave something sweet and light. It is easy to make and very fast. The original recipe I found here. This version of brownies did not have chocolate in it, and just did not sound right to have brownies without chocolate:) I changed a lot of ingredients in the recipe. This is my chocolate version of apple brownies.

Apple Brownies

1 egg
1/3 cup of sugar
1/2 cup of butter, melted
3/4 cup chocolate chips, melted
3 medium apples, peeled, cored and thinly sliced
1 cup all-purpose flour
1 Tbsp cocoa
1/4 tsp salt
1 tsp baking soda
1/2 tsp baking powder
1 tsp cinnamon
1/4 tsp ground cloves

Preheat oven at 350F. 
Mix egg and sugar. Add melted butter and chocolate. Stir. In a different bowl mix together flour, cocoa, salt, baking soda, baking powder and spices. Join the both mixtures in one bowl and mix well. Add sliced apples and mix well. Pour in 9x9 inch glass pan and bake at 350F for 30-35 minutes. Top with powdered sugar.

Branje jabuka / Apple Picking

Ovog vikenda smo ponovo išli na našu omiljenu farmu Berry Patch Farm. Dan je bio sunčan i topao, prijatan za šetnju. Bundeve, koje rezbarimo za Halloween su već narasle i spremne za branje, ali ovog puta smo brali samo jabuke. Jabuke su već pri kraju sezone i skoro obrane. Nakon dolaska sa farme sam napravila čokoladni kolač sa jabukama. Kolač je jednostavan i brz ali ukusan. Recept ću uskoro postaviti na blog. Ovo su neke slike sa farme...

This weekend we went to our favorite farm; Berry Patch Farm. Day was warm and sunny, it was a beautiful day for a walk. The pumpkins that we are carving for Halloween are ready for harvesting, but this time we picked only the apples. The Golden Delicious are almost at the end of the season and are mostly harvested, but we picked a lot of them anyway. After our trip to the farm, I made apple brownies. The recipe is very simple and easy, and the cake is tasty and light. Pretty soon, I will post it on my blog.
