Ovog leta sam otkrila blog Heidi Swanson 101 Cookbooks. Blog je pun recepata sa dosta neuobičajenih sastojaka, od kojih neke nikada nisam koristila prilikom kuvanja. Prvi recept koji sam probala da napravim je bio prženi pasulj sa lisnatim keljom. Kada spremam jelo po nekom receptu, uglavnom svaki put nešto izmenim. Moja verzija recepta sa 101 Cookbooks, prženi pasulj sa lisnatim keljom je bila malo drugačija. Na maslinovom ulju bih propržila sitno seckani beli luk, dodala pasulj iz konzerve, sitno seckani lisnati kelj i malo soli i bibera. Jednostavno i brzo ali jako ukusno, tako da je ovaj recept ovog leta bio često spreman kao dodatak mesu.
Juče sam na 101 Cookbooks našla pečene kinoa paštetice. Obično ne koristim kinou u kuvanju, ali sam odlučila da probam ovaj recept. Danas sam napravila paštetice od kinoe, ali malo drugačije nego što je Heidi postavila na svom blogu. Umesto prezli sam koristila braon pirinčano brašno i bademovo brašno. Paštetice su spolja bile hrskave, a iznutra meke i sočne.
* Napomena: mera za šolju se odnosi na šolju od tačno 250ml.
Paštetice od kinoe
oko 350g kuvanog zrna kinoe (ili 2+1/2 šolje)
4 jajeta
1/2 kašičice soli
1 kašičica praška za pecivo
pola crnog luka, sitno seckanog
2 češnja belog luka, sitno seckanog
1 kašika kozjeg sira (ja sam imala toliko, iako bi bilo mnogo bolje bar 2-3 kašike sira)
1 list lisnatog kelja, sitno seckanog
3-4 kašike braon pirinčanog brašna
2 kašike bademovog brašna
maslinovo ulje za prženje
Skuvati zrna kinoe prema uputstvu na pakovanju. Ja sam kinou pripremila ovako: u sud od 2 litre, staviti 500ml vode i sačekati da voda provrije. Dodati 1 šolju (od 250ml) kinoe, i kuvati pokriveno na srednjoj temperaturi oko 12 minuta ili dok kinoa ne upije svu vodu. Skloniti posudu sa šporeta i ostaviti kinou da odstoji još 15 minuta. Na ovaj način se dobije oko 4 šolje (od 250ml) kuvane kinoe. Ostaviti skuvanu kinou da se potpuno ohladi.
Pomešati kinou, so, prašak za pecivo i jaja. Dodati crni i beli luk, sir, lisnati kelj, pirinčano brašno i bademovo brašno. Sve dobro izmešati i napraviti paštetice debljine 3cm. Pržiti na ulju sa obe strane dok ne porumene.
Napomena: u originalnom receptu su korišćene prezle, ne brašno od badema i pirinča. U slučaju kada su prezle pri ruci, koristiti oko 2/3 šolje (od 250ml) prezli.Pomešati kinou, so, prašak za pecivo i jaja. Dodati crni i beli luk, sir, lisnati kelj, pirinčano brašno i bademovo brašno. Sve dobro izmešati i napraviti paštetice debljine 3cm. Pržiti na ulju sa obe strane dok ne porumene.
This summer, I discovered the blog of Heidi Swanson's 101 Cookbooks. Blog is full of healthy recipes, with some unusual ingredients that I've never used before. The first recipe I tried was pan-fried corona beans and kale recipe. However, I never exactly follow the recipe and always add or remove some ingredients. In the end, the recipe is always at least little different than the original one. For the pan-fried corona beans and kale recipe I tried a slightly different version of this recipe. I cooked minced garlic in olive oil, add canned kidney beans, kale cut in tiny strips, and salt and pepper. It was delicious and I prepared it many times over the summer.
Yesterday night, I found the Heidi's baked quinoa patties and decided to try it. Usually, I do not use quinoa in my cooking so I wanted to give it a chance. Today I prepared the patties but once again with different ingredients. Instead of bread crumbs I used a mix of brown rice flour and almond flour. The patties were crunchy on the outside and very moist inside.
Quinoa Patties
2 and 1/2 cup of cooked quinoa
4 large eggs
1/2 tsp salt
1 tsp baking powder
half medium onion, finely chopped
2 garlic cloves, minced
1 Tbsp of goat cheese (I did not have more, but probably 2-3 Tsp would work fine)
1 leaf of kale, without the stem, chopped
3-4 Tbs brown rice flour
2 Tbs almond flour
olive oil for frying
Cook quinoa according to package and let it cool for a while. Mix cooked quinoa, eggs, salt and baking powder. Mix well. Add onion, garlic, goat cheese and kale. Stir. Add brown rice flour and almond flour. If the mixture is too soft, you could always add little more almond flour. Make patties around 1inch tick. Fry each side of patties until golden brown.
